Spring Rolls

Burger (Ingredients):

  • 2 Vegan Burgers

 

Noodles (Ingredients):

  • 25g Glass Noodles (dry)
  • 1 tsp Blue Spirulina

 

Rolls (ingredients):

  • 6 rice papers
  • 2 avocados
  • 0.5 red bell pepper
  • 0.5 yellow bell pepper
  • 0.5 orange bell pepper
  • 0.25 cucumber
  • 1 carrot
  • 0.5 cup red cabbage
  • 2 tbsp fresh coriander

 

Sauce (Ingredients):

  • 2 tbsp peanut butter (unsweetened)
  • 0.5 tbsp lime juice
  • 0.5 tbsp maple syrup
  • 0.5 tbsp tamari sauce

 

Instructions:

1. Start by making your veggie burger following the instructions according to the package, when it’s ready, slice the burger into sticks and set aside.

2. Meanwhile cook the noodles according to the package, when the noodles are ready mix blue spirulina and mix till everything is blue..

3. Slice Bell Peppers, red cabbage, cucumber, carrots and avocado into sticks.Chop the coriander.Set aside.

4. Now make the dressing by adding all dressing ingredients to a bowl, whisk together and then add small amounts of water until it has the consistency you like.

5. Now take rice paper and dip it in finger warm water for a few seconds (you can use a plate with water on it),the paper will soften later (30 seconds)

6. Place the rice paper on a clean surface .Start  by adding avocado then all other ingredients
(don’t overfill).

7. Now the paper should be soft, roll it up like you would do with a burrito. if the paper breaks, you can just roll it up in an additional wet rice paper later.

8. Continue this until your filling ingredients are finished! Serve Immediately and dip in the peanut sauce!
