Healthy No Sugar Banana Cake

Ingredients

  • 5 mashed Bananas, ripe
  • 1/2 cup No sugar added applesauce, natural
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 3/4 cup Einkorn flour
  • 3/4 cup Oat flour
  • 3 tsp Vanilla extract
  • 3 tbsp Coconut oil

 

Frosting

  • 1 1/2 cups cashews (soaked for at least 2 hours)
  • 1 Tbsp lemon juice
  • 1 tsp vanilla
  • 1/2 cup milk
  • 2-3 each dates
  • 1tsp beet powder ( for coloring)

 

Instructions

How to make the cake:

  • In a large bowl combine all ingredients.
  • Pour into 3 x 4-6 inch round, greased cake pans and bake at 350 degrees for 20-25 minutes.
  • While the cake bakes, make your frosting!

 

To make the frosting:

  • In a high-powered blender, combine cashews, lemon juice, vanilla, milk, dates and beet powder until smooth.
  • Let the frosting chill in the refrigerator until you’re ready to use.
  • Let the cake completely cool, then stack the layers adding frosting in between.
