Energy Bars

I love healthy snacks that are super fast to make and these homemade energy bars are definitely one of my favorites. Just add in different seeds and nuts and have fun experimenting with this recipe. You can do as a bar or as a ball.

Ingredients:

  • 1/2 cup gluten-free oats, ground up into oat flour
  • 10 Medjool dates, pitted and chopped finely
  • 1/2 cup shredded unsweetened coconut
  • 1/3 cup hemp seeds
  • 1 tsp blackstrap molasses
  • 2 tbsp natural peanut butter
  • 1 tbsp tahini
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup vegan chocolate chips (optional)

 

How-To: 

  • (1) Grind rolled oats into flour and pour into a large mixing bowl. Mix in chopped dates.
  • (2) Add all other ingredients and incorporate together using your hands.
  • (3) Press dough into a shallow dish and cut into bars or roll into balls. Can be kept in the fridge or frozen.
