Chickpea Brownies
These brownies are amazing. Made with simple pantry ingredients and can be made in 40 minutes with 35 of that being baking time. They are gluten-free and made with clean ingredients making them a healthy and guilt-free sweet treat.
Chickpea Brownies:
- 1 can chickpeas, rinsed and drained
- 1/2 cup almond butter (or peanut butter)
- 1/2 cup pure maple syrup
- 1 1/2 tsp vanilla
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 cup cacao powder
- 1/4 cup oat flour
Chocolate Glaze (If you really love chocolate 🙂 ):
- 3 1/2 tbsp Cocoa powder
- 3 tbsp powdered peanut butter
- 1/4 cup maple syrup
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tbsp of water
- A pinch of salt
Directions :
Preheat your oven to 350F and line a loaf pan with parchment paper.
Add the chickpeas, nut butter and maple syrup to a blender or food processor, blend until smooth. Add everything else and blend again. Add brownies batter to your pan and bake for 30 – 35 min. Add the glaze when it’s ready or if you don’t want any glaze no problem still taste great .
Note: Slice into squares with a large, sharp knife. Enjoy! They taste even better on day 2! Store them covered in the refrigerator for up to 5 days. You can freeze leftovers!
